For decades, The Dolphin Hotel has been synonymous with late-night debauchery in Surry Hills. In 2016, the heritage property underwent a complete redo by George Livissianis, who created a glamorous new venue with dining room, wine bar and signature lounge with open-air terrace. Part edible indulgence and part pop-art installation, the owners harnessed Keith Haring for the walls and furniture of the main dining room that sits among panels of glass and two-story ceiling. Upstairs, a separate lounge features an L-shaped banquette and cube stools with walls penned by Beni Single in graffiti illustrations.
The Food
Veteran Australian restaurateur Maurice Terzini oversees a convivial menu of Afghan Bread, polenta chips and local burrata followed by selection of salumerie and antipasti form charred octopus to marinated crudo. Pizza doubles as dinner here with delectable hand-stretched pies topped with prawns, mussels and oysters or sausage and sorrels followed by while fish, half-chicken and rib-eye.
