A sushi coup on the Monte-Carlo dining scene, Fairmont lures LA's most famous Japanese chef to a designer dining room and terrace. A massive bar features signature cocktails and late-day dining scene with dramatic views of the principality. Captured in floor to ceiling windows, the main dining room is lined in wide-plank wood floors that frame semi-circle banquettes and modernist chairs facing the sea. A working sushi kitchen offers up-front counter seating as well as a long terrace that's a bit narrow but yields head-on sea views perfect for warm summer nights.
The Food
Chef Nobu Matsuhisa’s menu varies from each destination that includes similar resort outposts in Cape Town, Mykonos and Aspen. Signature dishes like Nobu tacos filled with wild tuna and avocado, yellowtail jalapeno and spicy tuna on crispy rice are consistent orders as well as more unique dishes to the location like squid pasta and toro tartare followed by black miso cod, rock shrimp tempura and endless cut rolls with an LA-twist.
