Its glass-enclosed storefront gives glimpse of the meaty and cheesy genius that lurks behind its doors. The entrance is fortified by glass cases displaying endless variations of cheese and meat selections available to-go or in-house table service in the galley-style dining room and bar with hand-painted walls and hip collection of local staff. Its owner stems from the UK and arrived to Aspen where she operates a 200-head goat farm that supplies much of the shop’s cheese selections.
The Food
Meat and Cheese is part gourmet market and part gastro-bistro offering a delectably casual all-day menu of lunch, dinner and in-between. The menu offers a sampling of charcuterie, cheese and sausage boards as well as a trio of salads and sandwich options from pork belly to flatiron steak. Main course selections are lengthier at dinner with roasted bone marrow, duck ragu, crispy whole fish and wagyu meatballs in addition to one of the best local rotisserie chickens we’ve eaten outside of Paris that is served with delectable brown-butter gravy.

By far the best addition to Aspen’s dining scene in a few years, the food proves that now all good restaurants in this posh mountain town have to be fancy.
