Here comes the latest Venetian Las Vegas expansion, Palazzo Resort and Hotel, with a new lineup of celebrity chefs and restaurant to prevent guests from ever wanting to leave the premises. While Charlie Trotter and Wolfgang Puck set-up franchises of existing Trotter and CUT steakhouses, it's Mario Batali and winemaker Joe Bastianich making the biggest headlines with the all-new CarneVino. The space, located next to B&B Ristorante and Enoteca San Marco, is decorated in classic Italian style with 16-foot ceilings, polished wood veneers and generous use of imported marble.
The Food
The name combines two essential ingredients of the restaurant, namely top-notch American beef and a much-touted international wine list. Look for a menu of steakhouse faire mixed with Italian touches like shaved Alba truffles, homemade pastas and intricate vegetable sides. Four-course meals begin with Handcut Steak Tartare followed by a pasta-course of Pappardelle with "Porcini Trifolati," and peaking with aged beef steaks rubbed with a blend of sea salt, black pepper and fresh rosemary to achieve a crispy charred crust.
