Located within Robert Redford’s Sundance Resort, 40-minutes drive from Park City, this acclaimed rustic eatery offers a sophisticated gourmand menu with game specialties and French twists. With numerous accolades from Wine Spectator and big city newspapers, the dining room features mountain-theme architecture with exposed pine beams and extensive collection of Native America artwork. Tall columns of timber and stone fireplace decorate the main eating area with its brown leather banquette and pine high-back chairs. The Food
Meals begin with a seafood-minded appetizer menu of cured gravalox, pan-seared scallops with sweet potato puree and a crisp tuna carpaccio. Gamy starters like wild bisen tortellini and Mexican buffalo sausage are in stark contrast to a vegetarian-minded mushroom tarte and trio of Frisee and herb salads. Entrees pull from local farms to assemble a mixed presentation of meats including roasted elk, braised lamb shanks and wild boar chop, each presented with mix of braised fennel, root vegetables or creamy cheddar grits. A tasting menu, served only for dinner, adds in an exotic soup as but requires a slightly boring selection of pepper steak, tuna or roasted chicken as entrée. Dessert is a mixed presentation of cakes and tartes including a berry custard and molten chocolate truffle that’s richly divine.
