A short ride from the city center comes the amazing world of Restaurant AS located in the middle of a working organic farm and former-chapel where this prized eatery enlivens a sunny day with some of the best farm-to-table cuisine in the country. Decorated like a crazy carpenter’s workshop from the turn of the century, a glamorous open kitchen is wrapped in concrete countertops with wood-fire oven and retractable glass doors that opens to a covered atrium come warmer weather. Inside, a more demure dining room stenciled in floral mosaics contains a more casual all-day dining scene of fashionable Amsterdam bohemians.
The Food
With a menu rooted in local produce and sustainable products, chef Sander Overeinder does his mentor proud with an array of wood-oven specialties and slow cuisine that’s as stylish as it is delicious. Meals begin with a selection of warm flatbreads topped with an array of ingredients from smoky pancetta to homemade ricotta or aged prosciutto. Main dishes include an incredible roasted chicken on a bead of mashed potatoes and grille vegetables or a more adventurous venison chop that can convert even those that squirm at the idea.
