With reigning caribou taxidermy looming overhead, a staircase trimmed in vintage oil paintings leads to a hostess booth attended by perky model-type that advises guests to disrobe less-chic outerwear and hats at the coat check. Caribou Club is a series of sexy, rustic, romantic spaces that surround a large lounge arranged in cushy club chairs, Alpine print pillows and hunting-theme decor that’s managed to last the test of time. Next to the lounge is a large bar with overflow seating from the main dining room with its coveted booths and antler-accented table alit in candlelight and clientele in wintery Chanel and Dior's finest.
The Food
Meals begin with a decadent selection of breads including a gooey cheese bread that's as delicious as it is in its caloric punch. Meals begin with appetizers like a tuna crudo, beef tartare with ox egg, full raw bar and terrine of foie gras. Pasta course shows off a selection of homemade pastas filled with ingredients like sweet potato and crab or topped with short rib Bolognese or lamb ragu. Main course includes a lengthy selection of meats from incredible bison, rib eye and fillet to less impress lobster entree that could be improved upon but still allows for room to grow at what many consider Aspen's best eatery.
