Stone floors and dark palette for furnishing and chairs brings a more elegant vibe, especially given the level or service and training of the in-house staff. More comparable to the grand ski lodges of the Canadian Rockies than the local hotel landscape of Park City, Montage Deer Valley has deconstructed its most upscale dining room to host an all-day restaurant from morning ski buffet through dressier late-night dinner. A locally sourced menu includes daytime lunch menu of raw bar specialties, entrée-size salads and pasta dishes inspired with a hearty Piedmont twist. Dinner becomes a more formal presentation as candles and white gloves come out for grander presentations of new American cuisine like rack of lamb, grilled steaks and daily seafood specials.
