A step-down courtyard just past Louis Vuitton reveals a covered terrace and glassy storefront leading to a singe door entrance. Inside, visitors discover a space that's become one of the most popular apres-ski bars in town for the gilded set. A three-sided bar straddles the middle of the room opposite a built-in wine cellar and accordion window. Two long banquettes covered in chocolate leather and tossed with faux fur pillows is as far as many guests get inside the actual restaurant, opting for the more casual bar over the adjacent formal dining room where more formal white tablecloth dinner service is a coveted reservation throughout the year.
The Food
A formal food and wine menu yields a diverse list of wines from France including some impressive bottles of Rothschild and La Tour priced in the high four-figures. Meals begin with choice of seared of terrine of foie gras, seared scallops or puree of bean soup with chanterelles. Pasta course offers savory squid ink tagliatelle or lobster topped spaghettini followed by mains of pan-fried liver, grilled lamb and roasted chicken.
Last Word
Some celebrity restaurants come and go in Aspen, but a rare few like Cache Cache with it apres-ski bar and French dining room stick around and simply get better with age.
