The Aspen restaurant features a sleek Main Street dining room that books up a month in advance during high season, and is home to Upstairs that's always on a first-come first-served basis. The amber-lit dining room awash in rich-colored woods with Japanese artwork features a rounded sushi bar led by some of the greatest sushi chefs in the business. The main room features tabletop-seating ideal for groups no larger than six, with additional space at the rear for private parties. Much like the chef's other outposts, the location caters to be-seen diners looking for innovative Japanese cuisine in a frill-free dining room reflective of look-at-me Aspen lifestyle.
The Food
Obviously not here for the ambiance, guests sit at compact tables and uncomfortable pine chairs ordering from a daily specials menu created by each of Matsuhisa’s lead chefs. Toro tartar with caviar and Kobe tataki sashimi are signature dishes that keep guests coming on an almost ritualistic basis. Most outposts of the restaurants feature the same Miso black cod and Sea Bass that caters to squeamish eaters still apprehensive about raw fish. Sushi lovers should indulge in the various selections of albacore, salmon and Spanish Mackerel sashimi cut to perfection. Dessert is best enjoyed at one of the area’s ice cream parlors instead of the Mochi or plum dessert on hand, as long as the paparazzi isn’t out front awaiting your exit.
