In a city with its fair share of posh Japanese restaurants, Tomo is one of the few that is actually led by chef Chitoshi Takahashi who’ll you’ll find behind the sushi counter most nights of the week. The space is located within a freestanding dining room within the Raffles Dubai, a two-story space overlooking the glittery skyline with mezzanine lounge and outdoor terrace. The crowd tends towards the casual food-minded, unlike Nobu or Zuma, with an even number of hotel guests and outside visitors.
The Food
A traditional Japanese dining experience begins with variations of fresh green and seaweed salads, tempura-battered dishes and izakaya specialties that are served first in most traditional restaurants. Further cooked dishes include miso cod, whole fish specialties and Kobe beef grilled to perfection. Sushi and sashimi come last, best enjoyed in hefty platters with a solo cut or hand roll to complete the dining experience.
