To Nobu purists that flock to eateries in London and Malibu, the Dubai outpost feels more Buddha Bar than Matsuhisa eatery located within the staggeringly large Atlantis Resort on Palm Jumeirah, a man-made group of islands in the shape of a tree. Designed by the Rockwell Group, visitors arrive to a glowing entrance located just off the mian casino floor. A series of interconnecting lounge and dining spaces are inspired by the sea but with Middle Eastern influences defined by cocoon-like space captured in moody lighting and lots of raw stonework.
The Food
Born and raised in Japan, Matsuhisa apprenticed in the sushi bars of Tokyo before he ventured overseas to Lima, Peru. Classically trained, Matsuhisa was challenged by the culture and regional ingredients that contributed to inventive style. Thereafter, he continued to Buenos Aires, Argentina, then back to Japan, Alaska and finally, Los Angeles where he opened his restaurant in 1987. Menu staples include sashimi salad with Matsuhisa soy sauce dressing, Yellow Tail Sashimi with jalapeno sauce, squid pasta with light garlic sauce and signature Black Cod in miso.
