The Food
Meals begin with a delicate selection of breads baked before each lunch and dinner service. Dishes like a signature ratatouille, raw red shrimps from San Remo and pumpkin cream soup utilize local farmers and purveyors for ingredients. Pasta and rise dishes yield epic risotto with saffron, gnocchi with baby squid and sea urchin spaghetti followed by wild sea bass, John Dory with scented vegetables and roasted lamb that’s the one reason to deviate from the seafood-favored menu.
