While his collection of Wolfgang Puck Cafes quietly fell into bankruptcy, his upscale restaurants are hotter than ever. Wolfgang Puck debuts the second installment of CUT steakhouse to the new Palazzo Hotel and Resort. The Beverly Hills eatery made famous by star-patrons like Tom Cruise and Katie Holmes who come in search of pricey kobe-beef specialties and renowned steakhouse menu with eccentric Puck-touches. Although not designed by star-architect Richard Meier like the LA-location, Avery Brooks & Associates designed the 160-seat restaurant and 60-seat bar in a Las Vegas modern design scheme of tri-color leather booths and center dining room with stainless-steel columns and modernist chairs.
The Food
It’s the hottest restaurant at the Palazzo, home to Mario Batali and Charlie Trotter, luring a fancy-cut of city scenesters that like to linger in the adjacent bar and lounge till around midnight. CUT serves a contemporary twist on the classic steakhouse with signature entrees including slow-cooked Indian Spiced Kobe Beef Short Ribs, Colorado Lamb Chops and Wild French Turbot French Riviera Style for two. Adjacent to the main dining room is an energetic, upscale bar with smaller menu called “Rough Cuts” featuring CUT’s popular appetizers overlooking the Shoppes at The Palazzo and famous Barneys New York.
