What is perhaps the best new restaurant to come to Whistler in the last year, Aura offers a three-course seasonal tasting menu that begins with appetizers like artichoke and parmesan veloute with lobster essence, terrine of foie gras with fig toast, and a thoroughly modern Waldorf salad with poached pear and blue cheese dressing. Mains include olive oil poached lamb with pumpkin polenta, veal breast with “osso bucco” sauce, and surf n’ turf platter of braised oxtail and hand-dived scallops. Dessert is a medley of blackberry parfait with citrus shortbread, opera coffeecake with espresso jelly, and chocolate bread pudding with hazelnut foam.
