    One of the best Italian chefs on St. Barth, Pascal Ramette has been a fixture along Salines beach until this last year that he decided to relocate his starry dining room to the Hôtel Manapany. The result is a larger, more-oceanfront address located within a dining room cast under a pitched beam ceiling with wrap-around walls of glass facing the sea. A crisp beach aesthetic prevails with upholstered sling-chairs and basket-woven chandeliers that frame a thoroughly glamorous dining crowd come winter high season.

  • The Food:

    Open for leisurely terrace lunch and fancier dinners, a menu prepped by a thoroughly native Italian staff begins with fresh octopus salad with grilled zucchini flown-in fresh to the island, burrata and roasted tomatoes and classic eggplant parmesan. Pastas like a black truffle ravioli, linguine with clam sauce and spinach tortelli are worthy of a main course should dishes like grilled tuna steak, beef paillard or veal Milanese not tempt your palette.
