Per Se Keller’s 3 Star Michelin Columbus Circle eatery

  • The Scene:

It’s called the urban interpretation of Napa’s French Laundry, the prized-eatery by Thomas Keller widely agreed in culinary circles as the best restaurant in America. Opened in 2004 in a perch high atop the Time Warner Center at Columbus Circle, a contemplative design of creamy décor designed by Adam Tihany is accessed behind a bold blue door replicated after the exact door that opens to French Laundry in California. The space contains just 15 tabletops with views of Central Park and the New York skyline with adjacent wine cellar, private dining room and bar with its own ala carte menu that a relative secret to most not in the Keller foodie loop.

A dining experience with Keller is one savored for a lifetime, amuse-bouche presented like the work of this edible Van Gough on Bernarduad china followed by nine sensation courses of vegetable bouillon with pine nuts, butter-poached Nova Scotia lobster with sea urchin mousseline and garbanzo crouquettes with cilantro shoots and coriander glaze. Whimsical spins on classic dishes arrive via gateau of foie gras with toasted brioche, potato angnolotti with lovage cream and Cote de Veau with morel mushrooms and truffle-Madeira cream that’s just an example of the tremendous seasonal tasting menus.
