    While many 5-star Italian hotels offer a Michelin-star eatery, few can boast of the Two-Star status lavished on Palazzo Sasso’s Rossellini’s Restaurant. Under the helm of chef Pino Lavarra, this dinner-only hotspot is arranged within an aristocratic dining room of tumbled stone floors with 12-foot ceilings and vintage wine cellar. An intricate menu of squid-stuffed ravioli, rose-wrapped lamb and olive crusted cod is presented in an elongated tasting sequence that’s a destination in its own right. During warmer summer months, the outdoor terrace is the place to book with its sunset views of the gulf and romantic candlelit atmosphere under the stars.

    Having honed his cooking skills at at Le Manoir Aux Quat Saisons, chef Pino Lavarra dazzles with a tasting menu of ingenious and hard to identify dishes like buffalo mozzarella served raw, in liquid form and iced. Pasta course is a squid and crab-filled ravioli that are almost too delicate to eat with its homemade pasta topped with creamed potato and ricotta sauce. Fish and meat course are a cod fillet with olive puree or rose-wrapped lamb with white asparagus drizzled in sun-dried tomato sauce. Meals are followed by a light cheese selection and mini-desert that satiates without overstuffing.

    Try to book a table outside at least two week in advance during the summer season and don’t forget the restaurant is closed during winter.
